Ansel also sold them a preliminary version of what he called 'insulation box' which was designed to increase a food's shelf life, especially when it was inside the space. They didn't understand how it worked, but they trusted the guy and if what he said was true, then that amount of money was too worth it.
As for why they had to do so, it was because they were finally going back to the city.
