To explain how HP works here, think of HP as a kind of barrier, it can heal and replace anything in the body, heart, brain, everything (Side note: This is how Liches works here).
It covers the whole body, but if hit hard enough, it will go through and damage the body, and if you take too much damage, your HP won't be able to heal you fast enough.
And yes, you can survive even if you have 0 HP and you can die even if you are close to max. (Durability is the HP of items.)
