Chapter 33 - Beaumont Texas, Hot Crab Dip

[Note from original creator:] This is one of my Mom's favorites. It was served at a wedding receptions and lots of parties or get togethers.

■1/2 Cup Butter, Softened.

■1/2 Cup Green Onions, finely chopped.

■1/2 Cup Celery, chopped fine.

■1/2 Green Pepper, Chopped.

■3 Heaping Tbs Flour

■1/2 C Milk

■1 Jar Pimento

■1 Tbs Picante Sauce

■Dash rep pepper

■1 tsp Worcestershire sauce

■1/2 tsp garlic powder or 1 clove, minced

■1 lb crab meat, drained (real, cooked) check for shell pieces and don't leave any in..

Instructions:

1. Melt 1/4 Cup butter in skillet.

2. Saute Onions, celery and Green Pepper.

3. Remove the veggies from the pan and add remaining butter.

4. Stir in the flour, cook slightly, do not brown it.

5. Add milk to make cream sauce.

6. Add cleaned, drained crab mean in a short time before serving.

Serve hot in a chafing dish with crackers as a dip.

(lightly sprinkle Cayenne pepper for extra heat if wanted)
