What are senses, if not ways to understand information? They are ways to process and understand the world.
No matter what you would do, they would be flawed. Most humans can't hear anything above or below a certain range. And even the sense of sight was imperfect.
Light had a speed, meaning that all things we see were happening in the past, not in the present.
We see things as they were, not as they are or could be. The same can be said with touch, smell and taste, all of them limited, tuned to be just bearable enough for those with it to handle.
Now, what Jophiel began to realize was that it was not the senses that she was controlling or removing but rather the output of the information that others received.
Of course, when she makes an area pitch black or makes a horse completely silent, she's not removing light at all, or sound. The sun and horse would still be producing both those things.
