Sensation is the result of analyzer activity. When receptors receive external stimuli, peripheral nerves send signals into the central nervous system, creating "sensations" in the brain. To put it more academically, it's "the process by which physical and chemical energy from external inputs is converted into neural impulses that the nervous system can receive and conduct. Different types of sensations are conveyed by different neurons; encoding is caused by the activation patterns of a whole group of neurons, where certain neurons are more active, while others less so."
