He'd encountered the Mantis and heard some stories about insect Assassins who were experts in mimicry from Spider, so he had some idea about the Stick Insect.
In terms of combat ability, his strength might be inferior to Gloria's, but when it comes to "assassination techniques", he was skilled in hiding himself and striking calmly from the shadows. The Stick Insect was certainly amongst the top ten in the Arachnid assassination skills leaderboard.
This outstanding assassin showing up in the small restaurant was obviously not here for casual chitchat or to sample Albion's infamous dark cuisine on a whim.
