2. Mix half a cup of soy sauce with 1/3 cup of water and a tablespoon of cornstarch. Dissolve the cornstarch well. This is the marinade for success in this sweet and sour pork.
3. Marinate the pork pieces in this mixture. Cover with plastic wrap and put in the fridge for an hour, or while we prepare all the rest of the ingredients.
4. Coarsely chop the vegetables and mince the garlic coarsely, not too small. Ginger, grated or finely chopped.
5. Drain the marinated pork but do not discard the sauce, which we will use later. Heat a little oil in a deep frying pan and brown the slightly drained pieces of pork there, until they are golden brown on both sides. Remove and reserve on a separate plate.
6. At the bottom of the pork cooking, add the cut vegetables. If necessary, add a little oil. Sauté, stirring continuously. They do not have to be done too much, they must be tender, al dente.
7. Mix the vinegar with the tablespoon of sugar and dissolve.
8. Once the vegetables are very al dente, add the reserved pork. Stir and add the vinegar and sugar mixture. Cook until the vinegar is reduced and the strong odor stops coming out, stirring almost continuously.
9. Serve hot, accompanied by white rice.
