Some beasts in the ominous could live off with having their heart out of their body or their beast core out of their body. While they had those two, they were able to stay alive even if they lose one.
Amato was an example of that kind of beast. If he had only had his beast core or heart harmed then, he wasn't going to be in any harm's way and would still be as powerful as he was, but he was denied that opportunity.
